University of Northern Colorado student creates cookbook adaptable to almost any food allergy

Torie Christensen has food allergies. In fact, the 21-year-old University of Northern Colorado student can’t eat anything with eggs, dairy, nuts or gluten (wheat).
As an avid cook and baker, Christensen was frustrated by the lack of recipes that took into account her food allergies. And as a student studying dietetics, she knew she wasn’t the only one.
“I couldn’t find much out there that I was interested in,” she said. “That’s where this all started.”
After her searches proved fruitless, Christensen decided she would write her own cookbook with recipes that could be adapted for nearly any food allergy.
“It has a combination of traditional recipes and a majority of these recipes can be adapted to be gluten-free, egg-free, dairy-free and nut-free,” she said. “Everyone, whether they have food restrictions or not, should be able to eat good food.”
